Maakouda
Maakouda. Maakouda is traditionally served as an appetizer, a side dish, or an ingredient in a long sandwich roll that's usually sold as street food and served with harissa, coriander, and lemon juice. Coat flattened potato mixture in flour, set aside.
Maakouda is a fried mashed potato dumpling / cake / fritter / ball that's traditional to Morocco and other North African countries.
Add the spices and egg, mixing well.
Begin to add the flour slowly, mixing while you go. Poke potatoes with a fork all around to speed up the baking process. Maaqouda, maqouda or maakouda (المعقودة in Arabic) is a recipe from Algeria but also from Morocco and Tunisia that is often prepared during the month of Ramadan.
